The Los Angeles International Extra Virgin Olive Oil (EVOO) competition is in full swing at the Sheraton Fairplex right now. Entries from around the world have been gathered here at Fairplex and will be judged over the course of this week.
Judges go through dozens of EVOO entries in a day, tasting, swirling and spitting before writing down notes about each and every one. Entries are poured into small blue jars (as seen in the photo) and presented to the judges based on category. This process continues throughout the day.
