Foodie Alert: Chef Brian’s Secret Recipe Revealed!

Top Chef Brian from Bravo Network’s Top Chef TV show is cookin’ and BBQ-in’ right here at the Fair. He’s also feeding the lucky Fairguests who stop by the Culinary Styles kitchen in Village on Broadway – today’s 1 p.m. show featured BBQ tri-tip and Paradise Salad. He shared his recipes, of course (see below for Chef Brian’s Paradise Salad).
Best of all, he serves the salad with a side of some homemade tortilla chips that are slightly different in that I-don’t-know-what-this-is-but-I-like-it way. Just because it’s the Fair, Chef Brian agree to reveal his secret ingredients in our behind-the-scenes video.

Paradise Salad with Champagne Vinaigrette (Chef Brian)
1 c sliced (in half-moon shape) red onions
2 c sliced (in half-moon shape) hothouse/English cucumbers
2 c red seedless grapes (sliced lengthwise)
2 c grape tomatoes (sliced lengthwise)
½ c fresh, cleaned and chopped basil
½ c crumbled feta cheese
½ tsp black pepper
Mix all vegetables, fruit and pepper together. Divide among four plates, Top salad with feta cheese. Drizzle with champagne vinaigrette.
Serves 4
